Mom & Cole, Labor Day weekend 2013
-
1 ½ cups corn (2 ears cooked fresh corn, cooled & cut from ears, or thawed frozen corn)

1/8 t ground cumin

1T diced red onion
-
2T chopped fresh basil,
-
2T roasted red pepper (~1/4 of a pepper)

1 ½ T Riesling vinegar
-
1 ½ T Olive Oil
-
salt to taste
Combine cumin, vinegar & oil in medium bowl. Whisk. Add remaining ingredients and stir gently to mix. Salt to taste.
