1 ¾ cup flour

1 ½ cup sugar

1 t baking soda

½ t salt

2 eggs

2 ripe bananas (1 cup)

½ cup oil

¼ cup + 1 T buttermilk or plain yogurt*

1 t vanilla

1 cup Chocolate Chips (optional-mini chocolate chips work best)

 

Combine dry ingredients in large bowl.  Combine wet ingredients in medium bowl.  Pour wet ingredients into dry ingredients and mix until pebble textured.  Add chocolate chips if desired and stir until combined.

 

Bake in greased 9” x 5” x 3” pan at 325oF for 1 hour, 20 minutes.

 

*If you don’t have either buttermilk or yogurt, you may add 1 T vinegar to ¼ cup + 1 T milk as a replacement.  Let sit for 10 minutes before adding.
