1 cup butter (2 sticks)

1 ¼ cup granulated sugar

¾ cup dark brown sugar

1 ounce unsweetened chocolate, melted

3 large eggs, room temperature

2 ½ cups flour

½ cup unsweetened cocoa powder

1 ¼ teaspoons baking powder

1 ¼ teaspoon salt

1 Tablespoon vanilla extract

1 ½ cups semisweet chocolate chips

 

Melt chocolate* and allow to cool to room temperature.   Beat butter, sugar, brown sugar and chocolate until smooth.  Add eggs and mix until fully combined.  In separate bowl, mix flour, cocoa powder, baking powder and salt.  Add slowly to batter until mixed.  Add vanilla.  Fold in chocolate chips. 

 

Drop by large spoonfuls (golf ball size) onto baking sheet lined with parchment paper.  Bake for 15 minutes.  Transfer to wire rack and allow to cool.

 

 

*Easiest way to melt chocolate is in microwave.  Place in a bowl and heat in microwave for a couple minutes.  If not melted, continue to heat in microwave for 30 seconds at a time.  Allow to cool before using-if added while still warm cookies may tend to be drier.
